Peach Vanilla Jelly

An easy fruit flavoured jelly recipe which not just kids but even you will fall for. Peach is a good source of dietary fiber, vitamin A, and niacin.

Ingredients to make Peach Vanilla Jelly:
3 cups washed, peeled, pitted and finely chopped peaches, 1 cup water, ½ tsp. lemon juice, 1 ½ cup sugar, 1 ½ tsp. pectin liquid, 1 vanilla pod
Steps to make Peach Vanilla Jelly:
1. Bring peaches, vanilla pod and water to a boil. Reduce to medium-low heat and simmer for about 5 minutes or until the peaches are soft and cooked.
2. Remove from heat and let it stand for 10 minutes for the vanilla pod to infuse the essence in it. Remove the pod and strain through a fine-mesh sieve lined with 2 layers of cheesecloth over a large bowl.
3. Measure the peach juice to get 1 ½ cups juice or you can add water to get the same.
4. Combine peaches and sugar stir constantly until sugar is dissolved. Add pectin, lemon juice and bring to a full rolling boil stirring occasionally. Boil of 1 minute and remove from heat. Skim the foam with a ladle.
5. Ladle hot preserves into hot sterilized jars, leaving ½ inch headspace. Adjust 2 piece caps. Process in a boiling water canner for 10 minutes. You can also pour some in pudding or jelly molds. Unmould when the jelly is set.
Serve your child these jellies to enjoy both the peach and vanilla flavour.
