Pudina is an aromatic herb and has vital vitamin and minerals like iron, calcium, vitamin A and C. Using pudina and rice, you can prepare Pudina Surprise. Rice provides carbohydrates and it is further flavoured with lemon juice, which has vitamin C and dals like channa dal and urad dal.

1 cup rice, ½ cup mint leaves, 3-4 cashews, 1 tsp mustard, ½ tsp mustard, 1 tsp urad dal, 1 tsp channa dal, 1 tsp olive oil, 1 tsp lemon juice, 2 cups water
1. Wash the rice. In a pressure pan, add the rice and 2 cups of water. Add half tsp olive oil and pressure cook rice for 3 whistles.
2. Allow the rice to cool.
3. In a pan, add remaining olive oil. Add mint leaves and saute for 2-3 minutes.
4. Grind the pudina to a fine paste. 5. In another pan, add cashews, mustard, channa dal and urad dal. Dry roast for 2 minutes and grind to a coarse powder.
6. To the cooled rice, add pudina paste and lemon juice. Give a good mix till the rice gets well coated with pudina paste.
7. Garnish the pudina rice with dal cashew powder. Give a good mix.
Yummy and healthy Pudina Surprise is ready to enjoy!
