Make these brightly colored Rainbow Mini Cupcakes, which are colored with healthy fruit and vegetable juice, providing with loads of vitamins and minerals!

1 1⁄4 cup maida, 1 tsp baking powder, 3/4 cup sugar, 1 cup milk, 1/3 cup oil, 1⁄2 tsp vanilla extract, 2 tsp carrot juice, 2 tsp spinach juice, 2 tsp blueberry juice
1. Sift together the flour, baking powder and salt. Separately, whisk oil, vanilla extract, milk and sugar together till well combined.
2. Mix the dry ingredients and wet ingredients together. Mix till smooth.
3. Divide the batter into 3 equal parts. Add carrot juice to the first part, spinach juice to the second part, and blueberry juice to the third part.
4. Layer different coloured batters one on top of the other in individual mini cupcake liners till they are three-fourths full.
5. Bake at 180°C for 15-20 minutes. Serve.
