Using apple and rice, you can prepare tasty Rangila Chawal. Flavour this rice further with the goodness of spring onion and bell pepper, which have vital vitamin and minerals and the resultant rice dish tastes fantastic.

1 cup basmati rice, 1 cup grated apple, ½ spring onion(the white part), ¼ bell pepper, 2-3 cashews, 1 tsp coconut oil, salt as required, 2 cups water
1. Wash the basmati rice well and soak the rice for about 20 minutes. Drain the water and keep aside.
2. In a kadai, put water and salt. Add half tsp coconut oil. Once the water comes to a boil, add the soaked rice and cook till the grains are separate. Transfer to a plate and allow the mixture to cool.
3. In a frying pan, add cashews and stir for 2-3 minutes. Grind to a fine powder.
4. In the same pan, put the remaining ½ tsp coconut oil. Saute the finely chopped spring onion and bell pepper for about 2-3 minutes.
5. Add the grated apple and cook for 2 minutes. Add the apple mixture to the cooled rice and mix gently so that the rice is coated well. Finally, add the cashew powder.
