This Rava Onion Crispy Crepe requires no grinding, no fermentation. This can be instantly prepared in 20 minutes.Rava is loaded with Vitamin B complex and is also high in Vitamin E, hence, quite healthy.

1 cup Bombay Rava, ½ cup rice flour, ½ cup maida, 1 finely chopped onion, ½ cup boiled, peeled and thinly grated potato, ½ tsp grated ginger, 2 spring curry leaves, 2 tbsp finely chopped coriander leaves, 1 tbsp powdered black pepper, ¼ tsp cumin seeds, required amount of water, salt to taste and oil
1. Mix well the roasted Bombay rava, rice flour, maida, required amount of salt in a bowl with water without lumps for 20 minutes.
2. The batter should be pouring buttermilk consistency, so add water accordingly.
3. Heat oil in a pan and add cumin seeds to it, fry for a few seconds and add the chopped onions, grated potato, curry leaves, coriander leaves, black pepper powder and sauté for a few minutes and add them to the batter.
4. Take a ladleful of the batter and pour on a heated pan from about 3-4 inch height on in a circular motion starting from edge to the centre.
5. Pour the batter until the centre is covered.
6. Maintain some holes here and there for steam to escape and make the crepe crispy.
7. Drizzle 1 tsp oil around the edges of the crepe and some in the center.
8. Cook till it turns golden brown on the bottom.
9. Flip over and cook the other side also.
10. Serve hot with coconut chutney or coriander chutney, check the spiciness before feeding.
