Crispy from outside with a soft and light texture from inside, these Sabudana Vadas are very healthy. Sabudana is a great source of calcium, protein, vitamin K, and other essential nutrients. It helps in maintaining your digestion system as well.

1 cup soaked sabudana, 3-4 medium sized boiled potatoes, ½ cup roasted and coarsely crushed peanuts, chopped coriander leaves, 1 tsp cumin seeds, 1-2 green chillies chopped, rock salt as per taste, 1 tsp lemon juice.
1. Take boiled potatoes in a bowl and mash them. Add sabudana to it and mix well.
2. Add the peanuts, rock salt, cumin seeds, coriander leaves, green chillies, lemon juice and mix the mixture very well.
3. Now take small portion of mixture in your hand and make small round flat patties from it.
4. Heat oil in a skillet and deep fry all the patties on medium flame.
Serve with coconut or green chutney.
