If you are looking for a protein rich breakfast other than eggs, then this Scrambled Tofu is a great option to prepare. Tofu can easily replace egss in the meal and provide the nutrition required.

½ cup tofu, 1 onion chopped, 1 tomato chopped, a pinch of garam masala powder, 1 tbsp oil or butter, coriander leaves for garnishing, salt as per taste
1. Drain the tofu from water.
2. Heat oil in a non stick skillet and add chopped onions. Saute them or fry them until it turned golden in colour.
3. Now add chopped tomato and stir fry for a while.
4. Add the tofu in a skillet and using a spatula, cut up the tofu in a skillet to look like a scrambled eggs.
5. Add salt, garam masala powder and toss well and cook for 2 minutes.
6. Garnish with coriander leaves before serving.
Serve it with whole wheat bread slice or bundle it in a wrap to make a wholesome meal.
