Simple and tasty soft Bombay sandwich can be made using bread and potatoes, both rich in carbohydrates. Flavouring the bread with little butter and the potatoes with little salt enhances the taste of this yummy sandwich.

2 aata bread slices, 1 potato, 1/2 tsp butter, salt as required
1. Boil the potato in the cooker for 4-5 whistles. Once cool, remove the peel of the potato and mash the potato. Add salt and mix well.
2. In a tawa, warm the bread slices on both sides for 1 minute. Apply butter on both sides where potato mixture has to be spread.
3. Apply the potato mixture on one slice. Close the sandwich with the other bread slice.
4. Keep the sandwich on the tawa for a minute on medium flame. Flip on both sides applying gentle pressure.
Soft Bombay Sandwich is ready.
