You can prepare spicy nipattu, using maida, besan and rice flour. This crunchy delicious snack is rich in carbohydrates and protein.

1 cup rice flour, ¼ cup besan, ¼ cup maida, 1 tsp jeera, salt as needed, 1 tsp red chilli, 1 tsp oil, oil for deep frying
1. In a mixing bowl, add the rice flour, besan and maida. Add jeera, red chilli and salt.
2. Add 1 tsp oil and give a good mix to the flours.
3. Add water and knead the mixture into a smooth dough.
4. Make medium sized soft balls from the dough.
5. Roll each ball slightly thick (as in paratha).
6. With the help of a cookie cutter or a bowl, cut into round shapes
7. In a kadai, warm the oil. Gently put one by one the rolled nipattus in oil and fry on both sides till they turn golden brown and crisp on a medium flame.
8. Repeat the same step with the entire mixture.
Delicious Spicy Nipattu is ready to relish. Once the nipattus are cooled, you can store the remaining in an air tight container for about 15 days.
