Spinach Veg Lasagne

There's nothing like lasagna to soothe a craving for a creamy, dreamy meal. With the goodness of vitamin C-rich tomato sauce, which is loaded with the carotenoid lycopene, this Italian classic takes on a healthy blend with a good dose of veggies nestled in its layers. Spinach is an excellent source of vitamins A, B2, B6, C, and K as well as manganese, folate, magnesium, iron and calcium, potassium. Mushrooms are a host of powerful antioxidants. Spinach Veg Lasange is a mouth watering dish.

Ingredients to make Spinach Veg Lasagne:

Spinach-2 cup, white button mushrooms- ½ cup, cheese-½ cup, tomato sauce-1 cup, lasagna sheets-1 box , olive oil-1/4 cup, black pepper-1 tsp and salt-to taste

Steps to make Spinach Veg Lasagne:

1. Boil spinach, lasange and mushroom separately and drain out water. Keep aside.

2. Preheat the oven the 350F.

3. Pour the tomato sauce into asaucepan kept over medium flame. Add salt and black pepper. Bring to a light boil, lower the heat, and simmer for a few minutes. Stir occasionally.

4. On the bottom of a pan put a layer of olive oil and tomato sauce. Place a layer of lasanga on top, covering the bottom of the pan. Spread cheese on top of the noodles, top with spinach, and sprinkle with cheese and coat with a small ladle full of sauce. Repeat the layers until you get to the top of the pan. Sprinkle the final layer with cheese.

5. Place in the oven and bake for 45 minutes or until bubbly and cheese is golden brown on top.

Remove from the oven and allow to cool for a 10 minutes before serving.
