Super Veg Feast

Using a variety of vegetables that are rich in vitamin and minerals cooked in a gravy of tomato and cashews, you can prepare super veg feast. Flavoured with ginger, garlic, butter and cream, this side dish tastes great and is an excellent accompaniment to chapatti and rice.

    Ingredients to make Super Veg Feast:

    4-5 pieces of cauliflower, 4-6 pieces of carrot, 3-5 potato cubes, 1-inch ginger, 2-3 garlic cloves, 2 tomatoes, 3-4 cashews, ½ tsp sugar, 2 tsp cream, 2-3 sprigs of coriander leaves, salt as required, 1 tsp butter

    Steps to make Super Veg Feast:

    1. In a kadai, add half tsp butter. Add the veggies that have been cut half inch long and saute for about 5 mins on medium flame. Cover and stir in between.

    2. Once the veggies are ¾ th cooked, remove and keep aside.

    3. In the same kadai, add half tsp butter. Add finely chopped ginger and garlic. Saute for 2 minutes. Add the finely chopped tomatoes and cook on medium flame. Cover and cook till tomatoes turn soft. Add the cashews and mix well.

    4. Once cool, add the tomato-cashew mixture in a blender and blend to a fine paste.

    5. Add the paste in the kadai. Add sugar and bring the paste to a boil. If very thick, add little water. Add salt as required.

    6. Add the cooked veggies to the gravy and mix well. Cover and cook for about 5 minutes on medium flame.

    7. Finally, add the coriander leaves and cream.

    Super Veg Feast is ready. Relish this rich dish!
