Sweet Corn Fried rice is not only easy to prepare but is extremely delicious and you will definitely love it. It offers the good of sweet corn, which is a rich source of carbohydrates, dietary fibre, Vitamin A, antioxidants, thiamine, niacin, pantothenic acid, folates, riboflavin, manganese, iron, copper, magnesium and zinc.

Ingredients: 1 cup uncooked rice, olive oil, 2 garlic cloves minced, 1 onion chopped, 1 green chilli slit, 1 cup sweet corn, ¾ cup chopped capsicum, chopped coriander leaves, pepper powder.
Steps:
1. Cook the rice, fluff it and keep it separately.
2. Heat some oil in a pan and fry the garlic. Next add the onions and green chillies and sauté for a few minutes.
3. Add the vegetables and sweet corn and stir.
4. When the vegetables are done, add the coriander leaves and pepper powder and stir well.
