Sweet pancakes taste yum for breakfast/evening snack. Using banana, rice and wheat flour along with jaggery, you can make this healthy food for your little one. The pancake has good amount of carbohydrates and provides instant energy to your child.

2 ripe bananas, 3/4th cup rice flour, 1/4th cup wheat flour, ½ cup jaggery, 3-4 cashews, 1 tsp ghee, water as required
1. Peel the bananas and roughly chop them. Put the chopped banana in a bowl and mash it.
2. Add powdered jaggery and cashews too.
3. In a blender, add rice and wheat flour. Add water to form a smooth batter. Add the mashed banana and the jaggery.
4. Blend well to a smooth paste (like dosa batter consistency)
5. On a hot tawa, pour a spoonful of batter and gently spread it. Size should be of small pancakes. Don’t spread too much.
6. Drizzle some ghee on the sides and top. Flip and cook till the other side also turns golden crisp.
