Today we will help you to prepare a quick and healthy jelly in a few minutes. It’s a great refreshing snack. Sweet potatoes are rich in antioxidant called beta-carotene.

1 cup coconut milk, 1 cup sweet potato washed and boiled, ½ cup sugar, 3 cups water, a pinch of salt, 1½ tsp. agar-agar powder, ¼ tsp. yellow food colouring
1. Steam cook sweet potatoes until soft. Combine coconut milk with sweet potatoes and blend in a mixer.
2. Strain the mixture through a fine sieve.
3. Stir agar-agar powder in ½ cup of warm water and whisk until agar-agar is dissolved.
4. Combine sugar, water, agar-agar mixture, yellow colour, pinch of salt and bring it to a boil until the sugar is dissolved completely.
5. Stir in pureed sweet potato and coconut mixture and simmer over low heat.
6. Pour the jelly mixture in pudding mould or jelly mould or in flat tray and leave aside at room temperature to set. Cut them into desired shaped if poured in a flat tray or unmould the jelly from the moulds.
Serve them as evening snacks to energise him.
