Potatoes are rich in carbohydrates. Along with sweet corn, which has fibre, protein and vitamin C and cheese, which has protein, you can make Sweetcorn Cheese Cutlets.

2 potatoes, ½ cup sweet corn, 1 tsp chilli powder, 3-4 sprigs of coriander leaves, 1 tsp ginger, ½ cup cheese, 3 tsp oil
1. Boil potatoes in a pressure pan. Cook for 3-4 whistles. Mash the potatoes once cooled.
2. In a mixing bowl, add the mashed potatoes. Add sweet corn, chilli powder, coriander leaves, ginger and ¼ cup cheese. Give a good mix.
3. Take a small portion of the potato corn mixture and give it a cutlet shape(round and flat).
4. In a pan, add 1 tsp oil. Once the oil is warm, place the cutlet on the pan. Shallow fry on both sides on medium flame. If needed, you can drizzle oil on top.
5. While serving, keep the cutlet on the plate and garnish on top with grated cheese.
Delicious, mouth watering Sweetcorn Cheese Cutlets are ready to be relished. Serve warm with tomato ketchup.
