Tomatoes are a rich source of potassium, dietary fiber, Vitamin C, Vitamin A, calcium, iron, Vitamin B6 and magnesium and hence needed to be included in your daily diet. Here’s an interesting recipe that allows you to prepare a delicious dish and help you get all the nutrition you need.

    Ingredients: 3 cups chopped tomatoes. 1 ½ tbsp. jaggery, ¼ cup peanuts, ¼ cup desiccated coconut grated, 2 tbsp chopped coriander leaves, 2 tbsp oil, ½ tsp mustard seeds. 3 green chillies chopped, 5-6 curry leaves, a pinch of hing, ¼ tsp turmeric powder. 

    Steps:

     1. On a low flame, brown the desiccated coconut and set aside. In the same pan, roast the peanuts till they change colour and become crunchy. Grind the peanuts into a fine powder and set aside. 

     2. In the same pan, heat a little oil and add the mustard seeds. Wait till they crackle and then add the green chillies, curry leaves, hing and turmeric powder,

     3. Saute for some time and add the chopped tomatoes. Cook the tomatoes become soft throughout. 

     4. Add the peanut powder and mix well. Check the salt level once in a while. Mix well and remove from flame. 

    This dish goes very well with chappattis and rotis.
