Vanilla Cardamom Plum Jelly

Making and canning your own jelly is quite easy with this recipe. This jelly is enriched with the flavours of vanilla and cardamom. Plums hold numerous health promoting compounds, antioxidants, minerals, and vitamins.

    Ingredients to make Vanilla Cardamom Plum Jelly:

    2 cup plums (deseeded), 1½ cup water, 1 tbsp. lemon juice, 10 cardamom pods crushed, 2 tbsp. powdered fruit pectin, 1 tsp. vanilla, 3½ cups sugar

    Steps to make Vanilla Cardamom Plum Jelly:

    1. Over high heat bring plums, water, lemon juice and cardamom to a boil in a large pan. Reduce heat to low, cover it with the lid, and simmer until the fruit is soft.

    2. Place a sifter lined with cheese cloth, over a bowl and pour the plum mixture into the sifter. Let the mixture drain until all juice has strained into the bowl.

    3. Add water to the mixture to make 2½ cups of juice.

    4. Mix pectin and vanilla and transfer them to the pan and bring to a full boil over high heat until the mixture doesn’t stop bubbling when stirred.

    5. Stir in sugar and bring the mixture to a full boil and keep stirring constantly. Remove from heat. Skim off and discard any foam from top.

    6. Ladle the jelly into sterilised jars and cover each jar with a two piece lid and let them cool down. Place the jars in the fridge to set.

    Delight yourself with these yummy jellies.
