Veg Tehri is a medley of mixed veggies, rice, and spices from the Awadhi cuisine. An easy one pot recipe-- it is easy and healthy too considering the amounts of vegetables that go into it, filled with vitamins and proteins.

2 large potatoes or 1 cup tightly packed potatoes, 2 cups chopped cauliflower florets, 2 medium sized or ½ cup chopped carrots, 12 to 14 French beans or 1/3 cup chopped beans, ½ cup green peas (matar), 3 onions chopped, 3 tomatoes chopped, 3 tablespoons chopped coriander leaves, 1.5 cups of basmathi rice, 2 cups water
1. Heat oil in a pan.
2. Add two tablespoon of ghee.
3. Add one cup of chopped onions, followed by salt and stir till translucent.
4. Add the tomatoes, potatoes, and stir.
5. Add carrots, beans, peas and cauliflower florets.
6. Mix the veggies well.
7. Add the coriander leaves.
8. Add the rice along with 2 cups of water.
9. Close and cook on low flame till water is absorbed and the rice becomes fluffy.
Veg Tehri makes for an ideal weekend lunch. You can pair it with a raita or even plain yogurt.
