Yum Chicken Hot Pot

This Chicken Hotpot is a great family meal which is lip-smacking and delicious. It is a perfect way of ensuring that you get some healthy and tasty food in a day. It contains potatoes that provide carbohydrates, which is an energy dense and may promote weight gain. Olive is a healthy oil option as it contains MUFA, a healthy fatty acid that helps in reducing inflammation. Chicken added in the recipe is a good source of protein, which is needed for your growth and development.

Ingredients to make Yum Chicken Hot Pot (1 serving):

Potato -100gms, onion -50gms, garlic -4- 5 shallots, shredded Chicken-50gms, tomatoes -50gms, cheese -50gms, olive oil- 10ml

Steps to make Yum Chicken Hot Pot:

1. Preheat the oven to 180ºc-200ºc

2. Put the butter in a medium-size saucepan and place over a medium heat. Add the onion and tomatoes leave to cook for 5 mins, stirring occasionally.

3. Once the onion and tomatoes are almost done add the cooked chicken and vegetables to the sauce and stir well.

4. Grease a medium-size baking dish with a little butter and pour in the chicken and onions mixture Carefully lay the potatoes and grated cheese on top of the hot-pot filling

5. Brush the potatoes with a little-melted butter and cook in the oven for about 35 mins. The hot-pot is ready once the potatoes are cooked and golden brown.
