Sometimes you need something filling, yet tasty, for you to enjoy – and that is where our recipe of batata vada comes to your rescue! Potatoes are a very good source of vitamin B6, potassium, copper, vitamin C, and dietary fibre.

Ingredients: 4 Potatoes, 10 curry leaves, 2 teaspoons urad dal, 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, 1 tablespoon finely chopped ginger, 1/2 teaspoon turmeric powder, 2 pinches of asafoetida powder, oil for frying, salt to taste, 1.5 cups besan, ½ teaspoon turmeric powder, 1 cup water
Steps:
1. Boil and mash potatoes.
2. In a pan, take some oil; add mustard seeds and urad dal. Add cumin seeds, curry leaves, chopped ginger, asafoetida. Fry till well cooked and add turmeric.
3. Add these tempered hot spices with the oil to the mashed potatoes. Add salt, mix well, and make balls from the mixture.
4. Take the gramflour, and add turmeric powder, salt, and enough water to make a batter.
5. Dip each potato patty or ball in the besan batter, deep fry and serve hot.
You can even serve these inside pav buns with some green chutney to make delicious vada pavs!
