Zaafrani Pulao

We treat rice as a blessing. We have many times pressured up a quick pulao or khichdi when the hunger prangs up. This is 98% digestible. Zaafrani Pulao has high amount of carbohydrates, proteins and calories which are highly nutritive. Carbohydrates provide the energy that fuels your metabolism, supports growth, keeps their brain and nervous system working and maintains their overall health. Protein is needed for growth and proper health. Vitamin A plays a critical role in maintaining healthy vision, neurological function, healthy skin of your kids. Vitamin C helps to repair and regenerate tissues and protects against heart disease.

    Ingredients to make Zaafrani Pulao:

    2 cups of Basmati Rice, a pinch of saffron (Kesar), 2 and a half cups of water, 1 onion, 1tsp ginger-garlic paste, ½ cup of milk, 1tbsp ghee, 3 cloves, 3 green cardamoms, 1 cinnamon stick, 2 to 3 tej patta, 1tsp shah jeera, 2 to 3 tbsp dry fruits, coriander leaves to decorate, salt to taste.

    Steps to make Zaafrani Pulao:

    1. Wash, rinse and then soak the basmati rice in cold water for about 30 minutes.

    2. Roast the saffron in a pan for about 25 to 30 seconds. Then powder it using a spoon. Then add warm milk into it and set it aside.

    3. Heat 1tbsp of oil in a large pan and roast the nuts and raisins until golden, and remove them into a smaller bowl. In the same pan heat 2tbsp oil. Add the whole garam masala (cloves, turmeric powder, shah jeera, etc from the list) and cook for 30-60 seconds or until it starts to smell fragrant.

    4. Add the onions and cook until onions turn translucent, for about 3-4 minutes.

    5. Add the ginger-garlic paste and cook for another minute.

    6. Add 2 cups of water and the nuts and mix them well. Bring the mixture to a simmer and add the drained rice. Cover and cook on high heat until almost all of the water is absorbed.

    7. Now lower the heat and stir in the saffron milk and very gently mix it into the rice. Arrange the pats of butter over the rice. Cover and cook on very low heat for 5-7 minutes.

    8. If you feel that the water is not enough to cook the rice, then sprinkle some water on the top and cook covered until done.

    9. Put salt according to taste and coriander leaver to decorate.

    The prep time for this is 30 minutes and the cooking time is 30 minutes. It serves four people.
