Give Barfi a twist, by making it healthy and colorful.Beetroot is one among the rooty veggies, which contain a lot of health benefits. It helps in immune boosting as it contains vitamin C and also essential minerals, like potassium, helping healthy nerve and muscle function.

    Ingredients to make Beetroot Barfi (1 serving):

    Beetroot -100gms, coconut -50gms, sugar -30gms, milk-25ml, almonds-5 gms

    Steps to make Beetroot Barfi:

    1. Grate beetroot and coconut and keep it aside.

    2. Take a pan, add ghee to it, add almonds and roast it for while and keep it aside.

    3. Add beetroot to the same pan and sauté till the water content is evaporated. Add coconut and fry till it is cooked.

    4. Add sugar to the pan and cook until done.

    5. Transfer this mixture to a plate and spread it evenly and allow it to cool.

    6. Once cooled, take a knife, warm the knife using your hands by rubbing it and cut into desired shapes.

    Serve this yummy looking, healthy barfi and enjoy!
