Carrot Corn Salad

Raw Carrot and steamed sweet corn are mixed together to give a rich healthy salad called Carrot and Corn Salad. Carrot is rich in beta-carotene and fibre. It is a good source of healthy vitamins and minerals. Sweet corn is everyone's favourite and is rich in fibre. Together, this dish is a really good source of nutrients.



Ingredients for Carrot and Corn Salad:

1 cup grated carrot, 1/2 cup sweet corn (steamed), 1 tbsp grated, coconut (opt), 1 tsp lemon juice, 1 tbsp chopped coriander leaves, 1-2 finely chopped green chillies,1 tsp oil,1/4 tsp mustard seeds,1/4 tsp urad dal, 1/4 tsp chana dal, a pinch of hing, salt to taste

Steps to make Carrot and Corn Salad:

1. Combine grated carrot, coconut, corn, lemon juice and salt in a medium-sized bowl.

2. Mix well and set aside.

3. Heat oil in a pan, add the mustard seeds, chana dal, urad dal, curry leaves and hing. Once done, add chopped chillies and fry a few seconds.

4. Add this seasoning to the salad.

Garnish with coriander leaves and freshly grated coconut. Your salad is ready to be served!
