Coconut Sambhar is a delicious variety of sambar. The flavour of coconut is the highlight in the dish. You can add vegetables of your choice. Sambhar goes well with rice and idli.

1 tsp mustard seeds (rai/sarson), 1 tsp fenugreek (methi) seeds, few curry leaves (kadi patta), 1 tsp urad dal (split black lentils), 2 dry kashmiri red chiles, 1 cup grated coconut, 1 cup mixed vegetables boiled, 1 lemon size tamarind pulp extract.
1. In a mixer , add the grated coconut and red chillies and grind to a paste with little water.
2. In a pan, heat oil. Add mustard seeds . when it crackles add urad dal and fenugreek seeds.
3. Add the tamarind pulp. Allow to boil.
4. Add one cup of mixed vegetables.
5. Add the ground coconut paste and allow to boil.
Once it boils, turn off the heat. Serve with rice.
