Pineapple is an excellent source of Vitamin C and manganese along with dietary fibre. Along with rice, which has valuable carbohydrates, you can prepare tasty fruity rice. The rice is flavoured with dry fruits like cashew and raisins and is a superb lunch/dinner treat.
½ cup rice, ½ cup pineapple , 2-3 cashews, 2-3 raisins, 1 tsp butter, 3-4 sprigs of coriander leaves, salt as per taste, 1 cup water
1. Wash the rice well. In a pressure pan, add rice and 1 cup of water. Pressure cook for 2-3 whistles. Once the steam has cooled down, remove the rice on a plate and allow it to cool.
2. Crush/Mash the pineapple pieces.
3. In a pan, add ½ tsp butter. Saute the raisins and cashews for 1-2 mins. Grind to a powder.
4. In the same pan, add 2 tsp water and add the mashed pineapple. Cook for 2-3 mins till the mixture gets little thick.
5. Add the pineapple mixture, butter, salt and finely chopped coriander leaves to the cooled rice. Give a good gentle mix.
6. Finally, add the cashew-raisin powder and mix it well with the rice.
Yummy and flavourful fruity rice is ready for lunch/dinner.
