You will be happy to give your kid a healthy breakfast with another an interesting idli recipe called Foxtail Millet Idli. Foxtail millet is rich in vitamins and minerals, such as, copper and iron.

1½ cups foxtail millet, 1 cup parboiled idli rice, ½ cup whole urad dal, ½ tsp. Fenugreek seeds-vendhayam, ¼ cup aval (to get real soft idli), salt to taste and water as needed
1. Wash all the ingredients together and soak for 3-4 hours.
2. Grind them to a smooth paste adding required water and salt.
3. Transfer to a container, mix well and allow it to ferment overnight.
4. Next day mix the raised batter well and pour them in greased idli plates.
5. Meanwhile boil water in a idli pan and keep the plates and steam cook it for 10- 12 minutes. Check with a toothpick. If the toothpick comes out clean, then the idli is ready.
6. Rest the plates for 2-3 minutes before removing them.
Prepare this healthy foxtail millet idli for breakfast and let your child enjoy it with his favourite chutney and sambar.
