Let's try a colorful dish today, which includes purple carrots and blueberries. Purple carrots are a good source of vitamin A, vitamin C, folate, potassium, and calcium. Blueberries contain vitamins and fiber and are tasty too.
Contents
4 large purple carrots, 1⁄2 cup blueberries and 1/4 teaspoon nutmeg
1. Peel the carrots and roughly chop them.
2. Take a pan and bring 2 inches of water to a boil over medium heat. Add the carrots to a steamer basket and cook for 10 minutes.
3. Then add the blueberries to the carrots and cook for an additional 5 minutes. Reserve steamer water. Let it cool a little.
4. Place the carrots, blueberries and nutmeg into a blender and puree until smooth by adding reserved water, breast milk or formula in 1/4 cup increments if needed.
Your Purple Halwa is ready to serve.
