Tasty Tomato Gravy Rice

Tomato Gravy Rice is one of the most simple, quick, flavourful and delicious basic rice dishes from South Indian cuisine. Your child will just love this flavoured rice. Tomatoes are good source of vitamin A, C, E, and K and also dietary fiber, potassium and manganese.

Ingredients to make Tasty Tomato Gravy Rice:
2 large tomatoes finely chopped, 5-6 cashews, 2 bay leaves, 1 inch cinnamon, 2 cloves,1 tsp. mustard seeds, urad dal, channa dal each, ½ tsp. cumin seeds, (jeera), ½ tsp. Kashmiri red chilli, ½ tsp. coriander powder, 1 onion finely sliced, 1 tsp. ginger garlic paste, 2 cups rice (cooked), 1 tsp. oil, 2 tbsp. ghee,4-5 curry leaves,1 tbsp. coriander leaves and mint leaves,¼ tsp. turmeric, salt to taste
Steps to make Tasty Tomato Gravy Rice:
1. In a wide heavy bottomed pan heat oil and ghee, sauté cashew until golden and, sizzle bay leaves, cinnamon, cloves, splutter mustard seeds urad dal, channa dal, cumin seeds, (jeera).
2. Add onion, curry leaves, ginger garlic paste and sauté until the raw smell goes.
3. Now add the tomatoes, very little salt and sauté until tomatoes turn soft and mushy.
4. Add turmeric, chilli powder, coriander powder, few mint leaves, coriander leaves and the remaining salt.
5. Sauté and cook for 2 minutes and add cooked rice and mix gently.
6. Cover with lid and simmer for 5 minutes to absorb all masala. Garnish with remaining mint and coriander leaves.
