Holige is basically a sweet flat bread recipe prepared mainly with all purpose flour, toor dal, and jaggery stuffing. It is a south Indian dish mainly prepared during festivals. It is enriched with protein, carbohydrate, vitamins and minerals. It is very easy to prepare and can be sevred with chutney, pickle, etc. Due to its irresistible taste, it is liked by everyone.

Ingredients to make Holige:

Maida-1 cup, water-½ cup, ghee- 1/4 cup, toor dal-½ cup and jaggery-½ cup

Steps to make Holige:

1. Take maida in a deep bowl and knead into asoft dough using enough water. Pour ghee over the dough and let it rest for three hours.

2. Take ½ cup of dal in a pressure cooker and rinse it. Add in a cup of water and cook the dal till 3 whistles.

3. Drain the excess water from the cooked dal and grind cooked dal and ½ cup of jaggery using a mixer grinder. Add little water to get a smooth paste.

4. Transfer it to a thick bottomed pan and switch on the stove. Start stirring the stuffing (dal and jaggery paste) over medium flame.

5. Continue stirring until the excess water content is dried. Do not make it very dry as it will become hard once it is cool.

6. Make small dough balls and fill it with stuffing.

7. Roll the balls into holige.

8. Heat tava and cook both the sides of holige with little ghee on medium flame

Turn off the flame. Serve hot with curd or rasam.
