2 cups large fresh deveined shrimp with heads preserved, 1 stalk lemongrass bruised with heavy objects to release flavour, water as required, ½ cup straw mushroom, 1 large tomato quartered, 2 lime leaves (slit the edges of the leaves to release flavour), 1 stalk green onion chopped, ¼ cup beans sprout, 1 red chili, lime juice as needed, ¼ cup fish sauce, 1 tbsp. fresh finely chopped cilantro leaves, 1 tbsp. cooking oil, salt to taste
1. Boil a cup of water and add the shrimp heads to prepare stock from it remove the heads and discard them.
2. Preheat a tbsp. of cooking oil and add the onions, stir fry for 1 minute, add the lemon grass, lime leaves and red chili and stir fry for another 1 minute. Add the shrimp head’s stock and bring to it a boil, add the mushrooms and cook for 1 minute.
3. Now add the shrimp and let them cook for 2 minutes or until the shrimp is cooked.
4. Stir in the fish sauce, lime juice and simmer for 2 minutes your Tom-yum-koong soup is ready. Garnish with cilantro leaves.
Prepare and serve this sour, spicy, savoury, and incredibly aromatic soup.
