Beetroot is rich in vital vitamins and minerals like iron, calcium, vitamin A and C along with fibre. You can prepare a quick, tasty, and healthy soup, beetroot soup using this highly nutrient vegetable in no time for your little one.

2 beetroots, ½ tsp ghee, 1 cup water
1. Wash and peel the beetroot. Cut into halves.
2. In a pressure pan, add water. Place the cut beetroots and pressure cook for 4-5 whistles.
3. Once the steam has cooled down, remove the beetroots. Allow them to cool.
4. In a blender, blend the beetroots to a fine puree.
5. In a pan, add ghee. Once the ghee is warm, add the puree and simmer for 2-3 minutes.
Remove the delicious soup in a bowl and serve warm.
